Chicken Roll-ups

 

2 chicken breasts, cooked and cubed

1 3/4 cups shredded cheddar cheese, divided

1/4 cup butter, melted

1 cup dry Italian bread crumbs

2 (10 3/4-ounce) cans cream of chicken soup

1 (12-ounce) can evaporated milk

1 (12-ounce) tube refrigerated biscuits

1 (4-ounce) can chopped green chilies (optional)

On lightly floured board roll each biscuit into a circle (about 5 inches).

Using 1 cup of the cheese, place chicken, cheese and chilies on one side and roll up.

Dip in butter and then roll in bread crumbs. Place, seam side down, in 9"x13" pan which has been coated with non-stick spray.

Mix soup and milk, and any chilies that left in small sauce pan until hot and pour over roll-ups.

Sprinkle remaining cheese over all and bake at 375 degrees for 15-20 minute
