Cheddar Ham and Broccoli Pasta Dish  

 

Ingredients

1 pkg. (12 oz.) elbow macaroni

1 small bunch (2 cups) of broccoli, cut in small pieces

2 tbsp. olive oil

1 medium onion, chopped

6 oz. smoked ham, diced (I use more)

2 cloves garlic, minced

1/2 tsp. salt (or to taste)

1/8 tsp. pepper

2 cups shredded Sharp Cheddar cheese  

Directions

Cook macaroni, stirring broccoli a couple minutes before end of cooking.

Meanwhile, heat oil in large non-stick skillet over medium heat.

Add onion and ham and cook, stirring, until onion has softened, about 2 minutes; add garlic, salt & pepper.

Drain pasta and broccoli, reserving 1/4 cup water. Toss with ham mixture and serve immediately.
