Italian Marinated Tomatoes

4 medium size ripe sliced tomatoes
1/4 C red wine vinegar
3 T water
2 T extra virgin olive oil (or canola, vegetable oil is ok)
1 T fresh chopped parsley
1 tsp dried Italian seasoning
1 tsp finely chopped onion
1 finely chopped garlic clove
1/4 tsp ground pepper
Salt is optional

Arrange tomato slices in a large shallow container (I just dumped the sliced cherry tomatoes into a very large bowl).  Combine the red wine vinegar, water, oil, parsley, Italian seasonings, onion, garlic, and pepper in a bowl and whisk it all together well.  Pour the marinade over the tomatoes. Cover and chill for approximately 8 hours or overnight (the longer it marinates, the more intense the flavor). Place in a decorative bowl and sprinkle with some parsley. 

Note:  I substituted my homegrown cherry tomatoes and cut them in half and used diced red onion (if you have fresh Italian herbs, use them to bring out the flavors).
