Fried Rice

4 slices bacon, diced
1 onion chopped
1 stalk celery chopped
1/2 red pepper chopped
4-6 C cooked rice
leftover cooked chicken, pork or beef (optional)
2 eggs
1 T low sodium soy sauce
1/2 C frozen petite peas
1/4 C chopped green onion
pepper and salt (if needed)

In a large skillet, fry diced bacon. Remove from pan. Using about one tablespoon bacon drippings or oil if preferred, sauté onion, celery and red pepper until mixture begins to wilt. Add rice and continue to fry until it begins to brown. Add bacon and meat if desired. Add unbeaten eggs, one at a time, stirring and frying until egg begins to firm up. Add soy sauce and peas and continue cooking and stirring for another five minutes or so. Check seasonings, top with chopped green onion, and serve.
