Fresh Strawberry Salsa

 

2 cups chopped strawberries
1 cup coarsely chopped cherry tomatoes
½ cup chopped green onions, use both green and white parts)
2 Tablespoons jalapeno pepper, seeded and minced
2 Tablespoons chopped fresh cilantro
2 teaspoon lime zest
2 tablespoons fresh lime juice
2 Tablespoons balsamic vinegar
1 teaspoon salt
1 teaspoon black pepper


Combine all ingredients, cover and chill for 8 hours.
Note: This salsa holds up well in the refrigerator for several days. Goes great with chips but would also be served as a side condiment to your favorite meat or on top of a salad.
