Apple Puff Pancakes

2 T butter
1 apple peeled and thinly sliced
1/2 C milk
3eggs
1 tsp vanilla
1/2 C flour
1/2 tsp cinnamon
1 T sugar
pinch of salt
2 T brown sugar or

sprinkle with icing sugar after it is baked

Preheat oven to 425 degrees. Place butter in pie pan and melt the butter in the oven. Thinly slice apples and when butter is melted arrange apples into the pan. Mix the remaining ingredients in a blender (or by hand), Carefully pour into the hot pan. Sprinkle with brown sugar and extra cinnamon if you desire. Bake for 15 to 20 minutes or till puffed and golden. The pancake does fall after it is removed from the oven, no worries. Serve with maple syrup, or a squeeze of fresh lemon. Delish!

Note: The original recipe that is posted is baked in a 9-inch pie pan, but I doubled the recipe and baked it in a 9 x 13-inch pan.
