Cheese Rolls

8 ounces cream cheese

½ cup white sugar

1 egg yolk

18 slices white bread

1 cup melted butter

1 teaspoon cinnamon

Mix cream cheese, ¼ cup sugar, and egg yolk.  Cut crusts off bread and roll each slice flat with rolling pin. 

Spread cheese mixture over slices.  Roll up each slice and cut in half.  Dip in melted butter, then roll in remaining sugar and cinnamon. 

Chill for at leasat 2 hours.  Bake at 400 degrees for 10-15 minutes.  Serve warm.

These can be made ahead of time and frozen until ready to use. 

This makes a good appetizer when serving brunch.
