Microwave Homemade Pudding

¾ cup sugar

2 T. Cornstarch

¼ teaspoon salt

2 cup milk

Place in 1 quart casserole dish.  Mix well.  Microwave on high for 5-7 minutes, stirring often until clear and thick.

Beat 2 egg yolks or 1 egg.  Mix a small amount of hot liquid with the eggs and then put all together.

Microwave on high for 1-3 minutes, stirring often.

Add 2 Tablespoon butter (or margarine) and 1 teaspoon vanilla.

This makes vanilla pudding.

For rice pudding increase milk to 2 ½ cups and add 2 cup of cooked rice.  For chocolate pudding add        2 squares or 2 oz. chocolate into the milk mixture and increase the sugar to 1 cup.
