Low Sodium cream of anything soup mix

4 cups dry skim milk powder (to lower potassium use non-dairy creamer instead of the milk powder)

1 ½ cups cornstarch

4 tsp. dried onion flakes

2 teaspoon dried thyme

2 teaspoons dried basil

1 teaspoon pepper

Measure all ingredients and place in ziplock bag.  Shake vigorously, transfer to a well sealed container and store up to a year.

To use this mix:

In a medium pot, combine 1/3 cup of the mix  with 1 cup no or low sodium chicken or vegetable broth.  Cook over low to medium heat until it thickens. This is equivalent to one cup of soup.  Add ½ cup of minced anything you want:  onions, mushrooms, asparagus, broccoli, celery, cooked chicken, diced potatoes, tomatoes, cooked shrimp, etc.
