Cranberry Jelled Salad

 

1/2 cup sugar

2 cups water

1 quart cranberries

12 cut up marshmallows

1 pkg. lemon Jell-O

1 small can crushed pineapple, well drained

(optional - ½ cup chopped nuts)

 

Boil sugar in water for 5 minutes.

Add cranberries and cook, stirring, until they pop. Put through a sieve pressing and catching all the liquid in a bowl. Discard the cranberry residue. To the liquid in the bowl, add lemon Jell-O and stir well to dissolve. Add crushed pineapple then the marshmallows. Pour into either 1 large or 6 or more (depending on size) small molds and chill overnight. Unmold onto lettuce lined platter or individual plates.
