Apple Pie Bars

 

Crust:

2 cups flour

1/2 cup sugar

1/2 tsp. baking powder

1/2 tsp. salt

1 cup butter

2 egg yolks, beaten

 

Filling:

4 cups apples, peeled, sliced 1/8 inch thick apples

1/2 cup sugar

1/4 cup flour

1 tsp. cinnamon

1/4 tsp. nutmeg

2 egg whites, slightly beaten (for top)

 

Combine 2 cups flour with the 1/2 cup sugar, baking powder and salt and cut in butter as for pie crust. Mix in egg yolks (mixture will be crumbly). Press HALF the mixture into the bottom of a greased 15x10 inch jelly roll pan. Combine filling ingredients, saving egg whites for the top. Arrange filling over crust. Crumble remaining crust mixture over the filling. Brush with the slightly bean egg whites over all. Bake at 350º about 35 minutes, or until apples are tender. Cool and drizzle with a thin powdered sugar glaze.

 

NOTE: I'm generous with the apple slices and heap the cup up and also for the sugar used in the filling.
